Eggless Chocolate Souffle

Chocolate is a classic flavour that devours our minds whenever we think of cake and pastries. And souffles are no exception. With World Chocolate Day around the corner, it’s time to bake the delicious, whipping soft, gooey chocolate souffle that rises in the oven and deflates as it cools, leaving a melt-in-mouth indulgence. Ingredients:

  1. Flour of your choice ½ cup

  2. Unsweetened cocoa powder ½ cup

  3. Powdered sugar ½ cup

  4. Baking powder ¼ tsp

  5. Baking soda ¼ tsp

  6. Salt ¼ tsp

  7. Milk of your choice ½ cup

  8. Oil ¼ cup

  9. Vanilla extract or essence 1 tsp

  10. Dark chocolate ¼ cup

  11. Hot water ¼ cup

  12. Powdered sugar for dusting


Instructions:

  1. Grease the ramekins with oil and dust them with cocoa powder and preheat the oven to 180 degree celsius.

  2. In a bowl, sift together the flour, cocoa powder, powdered sugar, baking powder, baking soda,and  salt, and set it aside.

  3. Melt the dark chocolate using a double boiler method. Stir it occasionally until smooth and melted.

  4. In a separate bowl mix the wet ingredients. Milk, oil, vanilla extract or essence, melted chocolate and stir until combined.

  5. Now gradually add the dry ingredients into the wet ingredients and combine. Remember, do not overmix. Mix until there are no lumps.

  6. Pour the batter into the prepared ramekins. Fill only ¾. 

  7. Place the ramekins in the preheated oven and bake for about 18-22 minutes, or until the soufflés rise and have a slightly cracked top. They should be set on the outside but still soft in the centre.

  8. Once done, remove from the oven and let them sit for a minute or two. Dust with powdered sugar before serving if desired.
