Easy Indian Vegan Laksa - A Healthy Bowl of Comfort

 We’ve all had ramen – the beloved noodle soup that comes in countless variations. But have you ever tried Laksa noodle soup? Native to Singapore and Malaysia, Laksa is a steamy, aromatic bowl of noodles soaked in a rich, spiced coconut broth, topped with tofu and fresh herbs. Ingredients:

  1. Oil - 1 tbsp

  2. Chopped onion - 1

  3. Minced garlic cloves - 4-5

  4. Grated ginger - 1 inch

  5. Green chillies according to taste

  6. Coriander powder - 1 tsp

  7. Turmeric powder - 1tsp

  8. Cumin powder - ½ tsp

  9. Garam masala - 1 tsp

  10. Kashmiri chilli powder - 1 tsp

  11.  Chopped tomato or tomato paste - 1 tsp

  12. Coconut milk - 400 ml

  13. Vegetable broth - 2 cups

  14. Tamarind paste - 1 tbsp

  15. Salt to taste

  16. Rice or wheat noodles cooked

  17. Tofu pan-fried - 1

  18. Mixed vegetables - 1 cup

  19. Spring onions chopped.


Instructions:

  1. Heat oil in a pot. Add onions, garlic, ginger, and green chilies. Sauté until soft and fragrant.

  2. Stir in turmeric, cumin, coriander, and garam masala. Cook until the raw spice smell fades.

  3. Add tomato paste and chili paste (or powder), stir for a minute.

  4. Pour in coconut milk and vegetable broth. Stir to combine.

  5. Add tamarind paste or lemon juice and bring to a gentle simmer for 10–15 minutes.

  6. Taste and adjust salt, spice, or tang as needed.

  7. Boil noodles according to package instructions. Rinse under cold water to stop cooking. Set aside.

  8. Pan-fry tofu until golden and slightly crisp.

  9. Steam or sauté veggies lightly with a pinch of turmeric and salt for flavor.

  10. Place a portion of noodles in a deep bowl.

  11. Pour hot, fragrant laksa broth over the noodles.

  12. Top with tofu, veggies, coriander, mint, spring onions, and lime wedges.

  13. Garnish with fried onions or peanuts for that satisfying crunch.
