The Authentic Honey Cake at Home
The crumbly, soft cake baked with goodness of wheat flour glazed with honey - the honey cake is a well-known treat across the bakeries of South India. Ingredients
Whole wheat flour - 1 ¼ cups
Baking soda - ½ tsp
A pinch of salt
Cold water - 1 cup
Sugar - ½ cup
Vanilla extract - ½ tsp
Lemon juice - 1 tbsp
Sunflower or neutral oil - ¼ cup
Honey - 3 tbsp
Rose water - 1 tbsp
Any flavoured jam
Method
Grease a 6x6 inch cake or loaf pan of your choice with oil. Set the oven to 180°C and preheat it for 15 minutes.
In a large bowl, sieve the wheat flour. Add the baking soda and a pinch of salt. Sieve everything together once again and set it aside.
Now for the wet ingredients,in a bowl, add a cup of water. Add sugar to the water and whisk it until the sugar dissolves.
Once dissolved, add the vanilla extract and lemon juice, and mix well. Then add the oil and mix well.
Once it's mixed, sift the wet ingredients into the dry ingredients. Start whisking the cake mixture gently.
Mix until the batter is smooth, but do not overmix.
Once the batter is ready, pour it into the prepared cake pan. Gently tap the pan to release any air bubbles that may have formed.
Place the pan in the oven and bake for 30–40 minutes at 180°C. Even though the time is mentioned, it's important to note that baking time may vary from oven to oven, some may take less or more time than stated.
Once baked, do the skewer test. If the skewer comes out clean, your cake is perfectly baked.
Demould the cake and place it on a wire rack. Once the cake cools down, poke holes all over it with a skewer.
Now, in a bowl, take the honey and add rose water or regular water. Mix evenly.
Place a pan on low flame and add sugar, water, and jam. Mix well until the texture is smooth. Turn off the heat.
Now pour the honey glaze all over the cake and spread it with a spoon or spatula.
Once the honey is spread, add the jam and spread it over the top and sides of the cake.
Sprinkle desiccated coconut all over the cake. Now let the cake rest for a few minutes for the jam glaze to set.
Once the jam is set, slice and serve the delicious cake.
