A Mother’s day masala tacos

Mother’s Day is around the corner, and what better gift than giving her the rest she truly deserves? It’s time to step into the kitchen and serve her a flavorful treat, Indian-style tacos! Let’s walk through this simple and wholesome recipe, from the leading exporter of sunflower oil.


Ingredients

  1. Maida - 2 cups

  2. Rajma 

  3. Salt

  4. Oil 

  5. Warm water

  6. Ajwain a pinch

  7. Finely chopped onion - 2

  8. Chopped tomato - 2

  9. Spring onion whites - ¼ cup

  10. Chopped coriander - 1 ½ teaspoon

  11. Boiled and mashed potato - 1

  12. Boiled rajma 

  13. Cumin seeds - ½ teaspoon

  14. Mustard seeds - ½ teaspoon

  15. Garam masala - 1 teaspoon

  16. Coriander powder - 1 teaspoon

  17. Cumin powder - 1 teaspoon

  18. Yogurt - ¼ cup

  19. Lemon juice

Method

  1. Combine all the dry ingredients in a large bowl.

  2. Once mixed, add the oil and gradually incorporate warm water, a little at a time, to form a smooth, soft dough. 

  3. Cover the dough with a damp cloth and let it rest for 20 minutes.

  4. Once rested, divide the dough into lemon-sized balls and roll each one into a smooth ball.

  5. Roll out each ball into a flat circle.

  6. Heat a tawa (flat griddle) and place the rolled-out dough on it. Cook for about 30 seconds on one side until bubbles appear, then flip and cook the other side for another 30 seconds.

  7. Use a kitchen towel or spatula to press down gently to help it puff up. Remove from the pan and set aside.

  8. Heat oil in a pan. Once hot, sauté the cumin seeds and allow them to splutter.

  9. Add the chopped onions and sauté until golden brown.

  10. Add the chopped tomatoes and cook for a few minutes until softened.

  11. Now add the mashed potatoes, mixed vegetables, and cooked rajma (kidney beans). Stir in the turmeric powder, cumin powder, coriander powder, red chilli powder, garam masala, and salt.

Mix well to combine all the ingredients and cook for about 7 minutes, allowing the flavours to blend and the mixture to thicken and dry slightly.

  1. Remove from heat.

  2. Take a warm taco shell and fill it with the spiced vegetable mixture.

  3. Top with any fresh vegetables you have on hand (like onions, tomatoes, cucumber, or lettuce). 

  4. Garnish with fresh coriander (cilantro) leaves.
