Crispy Murukku with Sunflower Oil

Murukku is a crunchy and delectable savoury treat and a must-have during Diwali. With its crunchy texture and flavourful spices, it’s a treat everyone enjoys. Ingredients

  • Oil for frying

  • Water as per requirement

  • Salt

  • A pinch of asafoetida

  • 1 teaspoon cumin seeds

  • 1 tablespoon sesame seeds

  • Dry roasted and grounded ½ urad dal

  • 2 cups of rice flour

Instructions

  1. Combine rice flour, urad dal flour, sesame seeds, cumin seeds, asafoetida, and salt in a large bowl and mix thoroughly.

  2. Once mixed add the softened butter until the mixture turns into a crumbly texture.

  3. Slowly add water, and knead the dough into a smooth ball. The dough should be neither too firm nor sticky, and it should not stick to your hands.

  4. Now fill the murukku mould with the dough and press it out to form spiral shapes in butter paper.

  5. In a kadai, heat oil on medium-high. When the oil is enough, drop a small piece of dough and check if it floats. If it floats, slowly drop the murukku. Add 2-3 at a time; do not overcrowd the kadai.

  6. Stir them continuously and fry until it is golden brown. Once the bubbling stops, remove it from the oil and place it in a kitchen towel. 

  7. Once cool, store the murukku in an airtight container to maintain their crispiness.
