A Classic Diwali Treat

Somas is one of Diwali's traditional snacks. Made with coconut-based filling with a flat-rolled maida and deep fried in oil from sunflower oil manufacturers in India. Let’s see how to make this delicious crunchiness:

 Ingredients

For the outer dough:

  1. Maida (all-purpose flour), 1 cup

  2. Sooji (semolina), 1 tablespoon

  3. Hot ghee or oil, 1 tablespoon

  4. Salt, to taste

For the inner stuffing:

  1. Fried gram dal, ½ cup

  2. Sugar, ½ cup

  3. Coconut, ½ cup

  4. Cardamom, 1 whole

 Method: 

  1. In a mixing bowl, combine maida, rava, and salt. Combine well.

  2. Once mixed, add ghee and mix thoroughly. To this, gradually add the water and knead the dough until soft. Cover and let the dough rest for an hour.

  3. Lightly roast fried gram dal until fragrant, then cool down. Grind the dal into a fine powder.

  4. Grind sugar and cardamom together into a fine powder. Set aside and roast the coconut until slightly golden, then let it cool.

  5. Mix the fried gram dal powder, powdered sugar, and roasted coconut together. Set aside. 

  6. Take a large portion of dough (slightly larger than a lemon) and roll it into a thin circle.

  7. Use a lid to cut the dough into small, thin circles. Place a tablespoon of the sweet stuffing in the center of one circle.

Grease half the edge with a little water, fold it over into a semicircle, and press to seal.

  1. Use a somas cutter to trim the edges, ensuring some of the sealed area remains intact to prevent opening during frying.

  2. Repeat the process with the remaining dough, rolling the scraps to form more circles.

  3. Keep the prepared somas covered until frying.

  4. Heat oil in a pan. Test the oil by dropping a small piece of dough—if it rises immediately, the oil is ready.

  5. Fry 2-3 somas at a time, allowing them to puff up and turn golden brown.

  6. Drain the fried somas on tissue paper.

  7. Allow them to cool completely, then store the crispy somas in an airtight container.
