Manchow Soup for Rainy Days
It seems the rainy season has arrived early, bringing with it cravings for something hot and sour. Nothing quite matches the satisfaction of a tangy Indo-Chinese Manchow soup. Ingredients:
A cup of oil
Finely chopped ginger garlic
Finely chopped green chilli
Chopped onions - ¼ cup
Chopped beans - 2-3
Chopped carrot - ⅓ cup
Shredded cabbage - 1 cup
Spring onion stalks - 2
Bell peppers - 3 tbsp
Finely chopped coriander stems a tbsp
Salt to taste
Pepper
Cornstarch - 1 ½ tbsp
Rice vinegar - 2 tbsp
Boiled noodles
Method
On a high flame, place the pan and pour oil. Once it's hot, add finely chopped ginger, garlic, coriander stems, and chillies. Saute for a few seconds, add the spring onion, and fry until golden.
Add the chopped vegetables, cabbage, carrots, and other vegetables of your choice and fry. Stir until it turns aromatic. Remember, do not overcook the veggies.
Now add the vegetable broth of your choice or 3 cups of water.
Meanwhile, in a small bowl, mix the cornflour with 3 tbsp of water and make it into a smooth slurry.
Reduce the heat, keep stirring, and slowly incorporate the corn slurry into the soup.
Cook until the soup starts to thicken. Add the remaining chopped coriander leaves and spring onions.
Add the salt, pepper, and vinegar, and stir. Adjust it according to your taste preferences.
Turn off the heat.
To add the extra crunch, fry the boiled noodles.
Now serve the hot manchow soup with noodles topped.
The tangy soup is ready to serve.
