Konjam Salt, Konjam Sweet Sharkara Upperi - Onam Special
Ingredients:
One cup of chopped raw Nendran banana
Jeera powder (¼ teaspoon)
Rice flour (2 tablespoons)
Jaggery (⅓ cup)
Dry ginger powder (¼ teaspoon)
Sundew refined sunflower oil for deep frying
Method:
In warm water, soak the jaggery. Once it is slightly thick, heat it on a low flame. Check for one-string consistency. Once done, strain, cool down, and set aside.
In another pan, roast the rice flour without letting the colour change. When smoke begins to appear, turn off the heat and place the pan aside to cool.
Peel the skin off a raw banana and chop it into bite-sized pieces.
Deep-fry the chopped banana in hot oil until the sizzling sound subsides and it turns golden brown. Place the drainage in a tissue and keep it aside.
In the meantime, prepare the jeera powder, dry ginger powder, and cardamom powder by heating the jaggery syrup in a pan.
When the jaggery syrup bubbles up and thickens like honey and begins to form single threads, add the powders, mix well, and then add the fried chips and simmer until the syrup is thoroughly absorbed, about 2–3 minutes, then turn off the heat.
After that, stir in the roasted rice flour as the chips are being coated.
Sharkara Upperi should be chilled and kept in an airtight container.
