Vegan Comfort Food: Yummyy!! Eggplant and Sweet Potato Curry!!!

A splash of spice, delight, and perfection is added to eggplant and sweet potato curry, which is fully plant-based, vegan, and gluten-free. It is easy peasy, lemon squeezy, and just takes 30 minutes of your time to prepare. We have used coconut milk for the sauce and a touch of harissa sauce, which adds spice to the dish. Ingredients: 

  • Onion: 1 

  • Cloves of garlic: 2

  • Eggplant: 1

  • Sweet potatoes: 2

  • Can of coconut milk: 1

  • Harissa sauce: 3 teaspoons

  • Curry spice mix: 1 teaspoon

  • Ground cumin: 1 teaspoon

  • Turmeric: - ½ teaspoon 

  • Cayenne pepper: - ½ teaspoon 

  • Salt is required as per taste.

  • Long-grain rice: 1 cup

Method: 

  1. Peel the onion and garlic and finely chop them.

  2. Now dice the eggplant, then peel and dice the sweet potatoes.

  3. Take a large pan or pot, add a tablespoon of Sundew refined sunflower oil, and heat it. Later, add the chopped onions until translucent. 

  4. Now add the spices and dry roast until it turns dark in colour.

  5. Add the finely chopped garlic and diced eggplant to the mixture and let it stew until the eggplant turns soft.

  6. Add the diced sweet potatoes, and pour the coconut milk over the mixture. Now add 3 teaspoons of harissa sauce, season the mixture with salt as per taste, stir well to combine, and let the mixture simmer on low heat for about 15 to 20 minutes, until the vegetables are fork-tender. Add a splash of water during cooking to thin the sauce.

  7. By that time, the curry and rice are cooked accordingly. 

Now the yummy spicyyy eggplant and sweet potato curry is ready to be served with cooked rice and garnished with some finely chopped parsley or coriander.
