Smoky, Spicyyy - Chipotle Portobello Tacos
Intensely flavoured vegan portobello tacos are here! Made with vegan cilantro cream, avocado, pickled onions, and roasted peppers, along with sheet-pan roasted portobello mushrooms in a wonderful chipotle marinade. These vegan tacos with smoke and heat are filling and tasty. Portobellos give portobellos their intense smokey taste, and vegan cilantro crème and red onions give them a great flavour punch. Ingredients:
2 medium portobello mushrooms
1 red bell pepper
½ onion
Chipotle Marinade:
1 tablespoon sundew refined sunflower oil
Canned chipotle—2 tablespoons
1 minced garlic clove
Cumin - ½ teaspoon
Coriander - ½ teaspoon
Salt as per taste.
4 warmed tortillas.
1 cup refried and warmed black beans
Method:
Preheat the oven to 425° Fahrenheit.
The bell peppers and portobellos should be cut into 12-inch-thick strips and wedges, accordingly. Cut one onion into 12-inch-thick rings.
Combine the marinade ingredients in a small bowl, then arrange everything on a sheet pan that has been coated with parchment paper.
Brush the marinade well on both sides of the mushrooms before sprinkling the remaining red bell pepper and onion over. Add salt to the portobellos. Roast the portobellos for 20 minutes, until they are tender to the fork.
While the meat roasts, heat the beans and any other garnishes. The vegan cilantro crema and the pickled onions require about 10 minutes to prepare. Or just use slices of avocado.
When ready to serve, reheat the tortillas in a toaster oven or over a gas stovetop while spreading them thickly with the refried black beans. Spread the tortillas with the chipotle portobellos, peppers, and onions. Add fresh cilantro, avocado, poblano salsa, and/or pickled onions as garnishes.
The smoky and hot chipotle portobellos are now prepped for serving.
