Tummy Goes Grrr when it's Walnut-lentil Bolognese
This is a healthy recipe loaded with tomatoes, herbs, walnuts, and lentils that is wholesome for any course of meal. Ingredients:
Two tablespoons sundew refined sunflower oil
1 cup finely grated carrots
Minced celery, 1 cup
Finely minced yellow onion (1 cup)
Minced garlic cloves: 6
Finely chopped walnuts, 1 cup
Rinsed, green lentils
Vegetable broth—4 cups
Jarred marinara sauce—3 cups.
1 cup red wine
Powdered garlic—2 teaspoons
Italian seasoning—2 teaspoons
2 teaspoons of freshly ground black pepper.
Sea salt is required as per taste.
Cooked pappardelle - 2 ½ cups
Method:
A freshly prepared vegan bolognese:
Together, sauté the celery, carrots, and onions.
With a little salt and water, add the walnuts, lentils, and jar of marinara sauce.
On the low flame, cook the lentils to get a traditional bolognese.
To get a creamier texture, blend the bolognese sauce.
Now the freshly prepared vegan bolognese is ready.
Walnut-lentil bolognese:
Over medium heat, heat the large saucepan. Once there is some glistening in the oil, add the celery, carrots, and onions and sauté them for about 6 minutes. Then add the garlic until fragrant.
Now add the walnuts and lentils and stir the mixture well.
Add the vegetable broth, marinara, wine, garlic powder, Italian seasoning, pepper, and salt.
Stir the mixture for about 35 minutes until the lentils are cooked.
Transfer 2 cups of sauce to a blender until it turns smooth. Add the sauce to the pan and stir well.
Now serve the walnut-lentil bolognese that can be topped with your favourite pasta and served hot.
