Crush Boredom and Hunger with Cajun Potatoes!
Everyone who has been to Barbeque Nation or similar buffet-type restaurants would agree that Cajun Potatoes are the best! The crispiness of the baby potatoes is beautifully complemented by the flavorsome sauce. Cajun Potatoes are a favorite among people irrespective of their ages! Ingredients:
for pressure cooking:
15 baby potato
½ tsp salt
water (for cooking)
for crispy potato:
¼ cup cornflour
¼ cup maida / plain flour
½ tsp chili flakes
½ tsp mixed herbs
¼ tsp white pepper powder
½ tsp salt
½ cup water
Sundew sunflower oil (for frying)
for the cajun sauce:
¾ cup mayonnaise
½ tsp chili flakes
½ tsp mixed herbs
¼ tsp white pepper powder
½ tsp garlic powder
½ tsp paprika/chili powder
½ tsp onion powder
½ tsp salt
1 tsp chili sauce
3 tbsp milk
other ingredients:
1 tsp onion (finely chopped)
1 tsp coriander (finely chopped)
Method:
Take the baby potatoes and way them thoroughly
Place the baby potatoes in the cooker and add water and 1/2 teaspoon of salt
Pressure cook for 2 whistles or until potatoes are 90% cooked.
Remove the potatoes from the cooker, press, and flatten slightly. keep it aside
In a small bowl take ¼ cup cornflour, ¼ cup maida, ½ tsp chili flakes, ½ tsp mixed herbs, ¼ tsp white pepper powder, and ½ tsp salt.
Add ½ cup water and mix well forming a smooth lump-free batter.
Coat the boiled potato with the batter uniformly.
Shallow fry the potatoes on medium flame and fry both sides until the potatoes turn golden brown and crisp.
Add ½ tsp butter and fry to have a buttery flavor.
Now in a small bowl take ¾ cup mayonnaise, ½ tsp chili flakes, ½ tsp mixed herbs, ¼ tsp white pepper powder, ½ tsp garlic powder, ½ tsp paprika, ½ tsp onion powder, ½ tsp salt, and 1 tsp chili sauce.
Mix it well into a smooth paste and add e tbsp of milk to achieve a smoother consistency.
To serve, place fried potatoes on a plate and pour a generous amount of cajun sauce over it.
Sprinkle, paprika, 1 tsp onion, and 1 tsp coriander.
